At the beginning of this beautiful season, Restaurant Sublima has prepared a special spring insert in the menu for its Guests, which delights with delicate flavors, carefully selected ingredients, and a refined composition of dishes.

The new menu proposals are a perfect example of how to harmoniously combine seasonal products with culinary creativity. Each dish is a celebration of spring – fresh, juicy, full of energy and colors.

Appetizer – lightness and aroma

We begin the spring discovery of flavors with an appetizer: prawns in a garlic-butter emulsion. Served with green asparagus, a touch of peperoncino, and delicate micro herbs, they create a dish that impresses with a subtle aroma and a slightly spicy accent.
The freshness of the asparagus and the juiciness of the prawns create a harmonious composition that is hard to resist.

Soup – the taste of tradition in a modern version

The next proposal is a classic in a modern interpretation – beetroot soup. Enhanced with roasted potatoes and a delicate egg, the soup retains its traditional character while surprising with depth of flavor.
This dish perfectly expresses the spirit of spring: lightness, freshness, and naturalness.

Main course – simplicity and nobility

For the main course, the Chef of Restaurant Sublima - Andrzej Jakomulski, offers a composition based on one of the most beautiful spring ingredients: white asparagus.
Served with a poached egg, drizzled with a velvety hollandaise sauce and gently balanced with crispy chorizo and chives, the white asparagus demonstrates how a few ingredients can create a dish full of elegance and deep flavor.

Dessert – spring sweetness to finish

At the end of this culinary journey awaits a true feast for the senses – a dessert in which flavor contrasts and textures reign.
Vanilla sauce, mango-passion fruit ice cream, gorgonzola, and almond granola create a composition that delights with sweetness, creaminess, and at the same time a delicate dryness of the cheese.
This dessert perfectly summarizes the light, fresh character of the entire spring insert.
